I’m a big fan of various crumbles and cobbler-like desserts, but I don’t often make actual cobblers. Something about the topping being more cake-like and less streusel-like just doesn’t attract me as much. But, since I’m always on a quest to find and make new delicious items for you folks, I figured I’d give it a try.
I can see why people love cobblers. Sometimes maybe you don’t want that crumble texture, and just want something softer and easier to enjoy. Fortunately, it’s easy to whip up this recipe for one, or double it and make two for you and a partner to enjoy.
If I had any specific recommendations for this recipe, it’s this: make sure you use a good peach. Since peach is the star of the show, a mediocre peach is going to leave you with a mediocre product.
Looking for something else to do with all your summer peaches? Why not try one of these?

Single-Serve Peach Cobbler
Equipment
- 10 oz. Ramekin
- Mixing Bowls
Ingredients
For the Filling
- 1 Peach Diced
- 2 Tsp Brown Sugar
- 2 Tbsp Chopped Pecans
For the Cobbler Topping
- 3 Tbsp Flour
- ¼ Tsp Baking Powder
- ¼ Tsp Cinnamon
- 1 Tbsp Brown Sugar
- 8 Tsp Milk 2 Tbsp + 2 Tsp
- 1 Tbsp Melted Butter
Instructions
- Preheat your oven to 350℉. Grease your ramekin (I use a non-stick spray.)
- In the ramekin, stir together your peaches, 2 tsp of brown sugar, and pecans.
- In a mixing bowl, combine the flour, baking powder, cinnamon, and brown sugar. Then, mix in the butter and milk until it just comes together. A few lumps are okay.
- Pour the topping mix over the peach mix as evenly as you can.
- Bake for 25-27 minutes, until the edges of the cobbler are slightly golden.
- Remove from the oven and let cool slightly before enjoying. I like to serve with a scoop of ice cream!
