Single-Serve Peach Cobbler

A simple peach cobber made in a ramekin, the perfect size for one person to enjoy.

Ingredients

For the Filling

  • 1 Peach Diced
  • 2 Tsp Brown Sugar
  • 2 Tbsp Chopped Pecans

For the Cobbler Topping

  • 3 Tbsp Flour
  • ¼ Tsp Baking Powder
  • ¼ Tsp Cinnamon
  • 1 Tbsp Brown Sugar
  • 8 Tsp Milk 2 Tbsp + 2 Tsp
  • 1 Tbsp Melted Butter

Instructions

  • Preheat your oven to 350℉. Grease your ramekin (I use a non-stick spray.)
  • In the ramekin, stir together your peaches, 2 tsp of brown sugar, and pecans.
  • In a mixing bowl, combine the flour, baking powder, cinnamon, and brown sugar. Then, mix in the butter and milk until it just comes together. A few lumps are okay.
  • Pour the topping mix over the peach mix as evenly as you can.
  • Bake for 25-27 minutes, until the edges of the cobbler are slightly golden.
  • Remove from the oven and let cool slightly before enjoying. I like to serve with a scoop of ice cream!
