
If you want to make a basic chocolate cake, you have a couple of options. The box mix is right there, but if we’re being honest, whipping up a recipe on your own is pretty easy.

What this means, is that sometimes I want to try a recipe that’s a little weirder. In this case, it’s a chocolate cake with built-in pudding, just using basic cake ingredients and no pudding mix.

The actual recipe is pretty similar to this lemon sauce cake, but obviously the ingredients are very different. The end result is a very fudgey, very gooey treat that has a texture like cake with pudding running through it.

If you’re a fan of lava cakes but don’t want to make something that elaborate, or if you really like very gooey brownies, this is definitely the cake for you. Serve it warm topped with ice cream, or chill it and enjoy it cold, both are great.

Chocolate Pudding Cake
Equipment
- 9×9" Baking Dish
- Mixing Bowl
- Rubber Spatula
- Whisk
Ingredients
- 1 Cup Flour
- 2 Tsp Baking Powder
- ½ Tsp Salt
- ¼ Tsp Espresso Powder Or instant coffee powder
- ½ Cup Cocoa Powder Divided into quarter cups.
- ¾ Cup White Sugar
- ¼ Cup White Sugar Yes, two sugars (divided)
- ¼ Cup Brown Sugar Yes, three sugars
- ½ Cup Milk
- ⅓ Cup Butter Melted
- 1½ Tsp Vanilla Extract
- 1¼ Cup Hot Water
Instructions
- Preheat your oven to 350℉. Spray your baking dish with a nonstick spray.
- In a mixing bowl, whisk together the flour, baking powder, salt, coffee powder, ¾ cup of sugar, and half of the cocoa powder.1 Cup Flour, 2 Tsp Baking Powder, ½ Tsp Salt, ¼ Tsp Espresso Powder, ½ Cup Cocoa Powder, ¾ Cup White Sugar
- Whisk the milk, butter, and vanilla extract into the dry ingredients until well combined. Pour this batter into the baking dish.½ Cup Milk, ⅓ Cup Butter, 1½ Tsp Vanilla Extract
- In another bowl, whisk together the brown sugar, remaining white sugar, and remaining cocoa powder into a dry mix. Pour this over the batter in the baking dish.¼ Cup White Sugar, ¼ Cup Brown Sugar
- Pour the hot water gently over the top of the batter and dry mix. Don't stir or mix this up, it's supposed to be separate like this.1¼ Cup Hot Water
- Bake your mix for 40 minutes. It will still look half underdone, but that's just the pudding. Remove from the oven and let cool for 15 minutes so the pudding has time to set. Top with ice cream, whipped cream, or other toppings, and enjoy!
