Preheat your oven to 350℉. Spray your baking dish with a nonstick spray.
In a mixing bowl, whisk together the flour, baking powder, salt, coffee powder, ¾ cup of sugar, and half of the cocoa powder.
1 Cup Flour, 2 Tsp Baking Powder, ½ Tsp Salt, ¼ Tsp Espresso Powder, ½ Cup Cocoa Powder, ¾ Cup White Sugar
Whisk the milk, butter, and vanilla extract into the dry ingredients until well combined. Pour this batter into the baking dish.
½ Cup Milk, ⅓ Cup Butter, 1½ Tsp Vanilla Extract
In another bowl, whisk together the brown sugar, remaining white sugar, and remaining cocoa powder into a dry mix. Pour this over the batter in the baking dish.
¼ Cup White Sugar, ¼ Cup Brown Sugar
Pour the hot water gently over the top of the batter and dry mix. Don't stir or mix this up, it's supposed to be separate like this.
1¼ Cup Hot Water
Bake your mix for 40 minutes. It will still look half underdone, but that's just the pudding. Remove from the oven and let cool for 15 minutes so the pudding has time to set. Top with ice cream, whipped cream, or other toppings, and enjoy!
