
My partner bought a huge box of Rice Krispies cereal, and after eating a bunch of it, decided he wanted to do something with it instead of just eating bowls of it. He wanted, he said, something that wasn’t just Rice Krispie Treats. I don’t know why, I love a good cereal bar, and making Rice Krispie Treats with different flavors (like these PBJ Treats) is great too.

What he found was a savory cheese puffs recipe. It used cheddar, flour, Rice Krispies cereal, and a bit of butter to make cookie-like cheese puffs. So, I made a batch, and we tried them.

The end result was pretty disappointing. They tasted more like balls of flour than cheesy cookies, the flavor that did come through was kind of bland, and they didn’t have all that great a texture either.

I’m not the kind of person to leave the idea alone once I got ahold of it, though, so I tried again. This second time, I think I nailed it, and all it took was a mixture of different cheeses and a bunch of spices to give it more interesting flavors. So, next time you want something with Rice Krispies but you don’t want marshmallows and sugar, why not give this a try?

Cheesy Rice Krispie Cookies

- Baking Sheet

Ingredients
- ½ Cup Butter Softened
- 1 Cup Flour
- 1 Cup Shredded Cheese I used half cheddar, half monterey jack.
- 1 Cup Rice Krispies
- ¼ Tsp Garlic Powder
- ¼ Tsp Onion Powder
- ¼ Tsp Salt
- ¼ Tsp Parsley
- ½ Tsp Chives
Instructions
- Preheat your oven to 325℉. Line your baking sheet with a silicone mat or parchment paper.
- Mix all of the spices together and set them aside.¼ Tsp Garlic Powder, ¼ Tsp Onion Powder, ¼ Tsp Salt, ¼ Tsp Parsley, ½ Tsp Chives
- In a mixing bowl, combine the butter, flour, cheese, cereal, and spices. I found it best to mix by hand, to get it thoroughly combined without crushing the cereal too much. You'll end up with a fairly uniform ball of dough.½ Cup Butter, 1 Cup Flour, 1 Cup Shredded Cheese, 1 Cup Rice Krispies
- Scoop and roll out ball of dough. My batch made 17 cookies, but you can get between 15-20 depending on the size of your portions.
- Flatten each cookie ball with fork (wet the fork to keep the dough from sticking to it, if that happens).
- Bake the cookies until lightly browned, about 15-20 minutes.
- Remove the cookies from the oven, transfer them to a cooling rack, and let cool for 10 minutes before serving.
