Apple Cinnamon Spoon Cake

Spoon cakes are quickly becoming one of my favorite super-simple dessert options. They’re like cakes, and like coffee cakes, but they are a lot easier to throw together and don’t need as much care taken to make them presentable, you know? A cake that you’re meant to dig into with a spoon just to serve! Something rustic, something quick and easy, a great way to use up extra fruit.

It’s apple season around here, which means I’ve stocked up and have been looking for something to make with some of them. I’ve already made a ton of different apple recipes (you can see them here), so it was time for something new.

I will say, the recipe I based this on used an apple pie filling for the fruit layer, while I made my own out of apples and spices. Mine isn’t as soft or as sweet as pie filling would be, but that’s not a bad thing. Feel free to use pie filling instead if you want, or even make your own pie filling instead of the makeshift version I made. Your spoon cake will turn out delicious either way.

Total Time 3 hours 30 minutes

Equipment

  • Cake Pan I like my springform pan the most.
  • Mixing Bowls
  • Apple Peeler

Ingredients

  • 2½ Cups Diced Apple About two medium apples.
  • 1 Tsp Cinnamon
  • ¼ Tsp Salt
  • 2 Tsp White Sugar
  • ¾ Cup Butter Melted
  • ¼ Cup Brown Sugar
  • ¾ Cup Buttermilk Room Temp
  • 1½ Cups Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder

Instructions

  • Peel, core, and dice your apples to a size you like. I kept mine a bit on the larger side but it doesn't matter except for your preferred texture at the end.
    2½ Cups Diced Apple
  • In a bowl, add the apples, cinnamon, salt, and white sugar, and mix until the apples are well coated. Set this aside for about 2-3 hours to prepare the apples.
1 Tsp Cinnamon, ¼ Tsp Salt, 2 Tsp White Sugar
  • Preheat your oven to 350℉. Grease your cake pan (I use a 9" pan) with some extra butter.
  • Spread the apples over the bottom of the pan and set it aside.
  • In another bowl, mix together the brown sugar, flour, baking powder, and baking soda. Add in the melted butter and buttermilk, and stir until it combines into a batter.
¾ Cup Butter, ¼ Cup Brown Sugar, ¾ Cup Buttermilk, 1½ Cups Flour, 1 Tsp Baking Soda, 1 Tsp Baking Powder
  • Spoon the batter over the apples and spread to cover evenly. It'll be thick for a cake batter, but that's fine.
  • Bake your cake for 25-30 minutes, until cooked through. Remove from the oven, let cool, and serve with ice cream, whipped cream, a drizzle of caramel, or whatever you like!
