Three-Ingredient Blueberry Fritters

I’ve been on a “simple recipe” kick recently, looking for basic baked goods to make and consider sprucing up down the line. Last week it was savory drop biscuits, and this week it’s something a lot sweeter: fruit fritters!

In this case, the three ingredients you need are vanilla yogurt (preferably the whole milk variety for the fat), self-rising flour (which you can make with normal flour, baking powder, and salt), and of course, the blueberries. You can also use other fruits if you want, though your cooking times might vary a little.

I was initially a little hesitant to make these, specifically because they involve frying. I’m still a little scared of a big pot of hot oil, so I’m a little inexperienced with frying like this. It turned out pretty well, though! I did, however, experiment and bake some of the batter to see if it turned out differently.

If you want the darker colored, crisp exterior and soft interior of a traditional fritter, definitely fry the batter. Baking it is delicious too, but it has the texture more like a danish, and doesn’t darken up. You can see the difference above.

Ingredients

  • 2 Cups Vanilla Yogurt Preferably full fat.
  • Cups Self-Rising Flour
  • 1 Cup Fresh Blueberries
  • Oil for frying Use one with a high smoke point or you're in for a bad time.

Instructions

  • Pour about two inches of oil in your deep pot and get it heating, aiming for about 350℉.
  • In a mixing bowl, mix the yogurt and flour until no clumps are left. Fold in the blueberries and try to make sure they're all coated. Blueberries on the outside can burst in the oil.
  • Dollop about ⅓ of a cup of batter out into the oil, and try to flatten it a bit so your fritters are broader and flatter rather than more spherical.
  • Fry each batch of 2-3 fritters at a time for 5 minutes, flipping halfway through. They'll end up dark golden brown.
  • Move your fritters to a cooling rack. Add a glaze (mix some milk and powdered sugar) if you like, though be aware that it will soften the exterior if left over-night.
