Ingredients
2CupsVanilla YogurtPreferably full fat.
2¼CupsSelf-Rising Flour
1CupFresh Blueberries
Oil for fryingUse one with a high smoke point or you're in for a bad time.
Instructions
Pour about two inches of oil in your deep pot and get it heating, aiming for about 350℉.
In a mixing bowl, mix the yogurt and flour until no clumps are left. Fold in the blueberries and try to make sure they're all coated. Blueberries on the outside can burst in the oil.
Dollop about ⅓ of a cup of batter out into the oil, and try to flatten it a bit so your fritters are broader and flatter rather than more spherical.
Fry each batch of 2-3 fritters at a time for 5 minutes, flipping halfway through. They'll end up dark golden brown.
Move your fritters to a cooling rack. Add a glaze (mix some milk and powdered sugar) if you like, though be aware that it will soften the exterior if left over-night.
