French Onion Dip

Chip dip is one of those products I love but I have to resist buying because I can and will go through a tub of it way faster than I should. So I thought: maybe I could make some from scratch? Truthfully that’s the inspiration for a lot of my posts, so why not.

I’ll preface this with: if you want this dip to be close to what you get at a grocery store, you’ll need to modify it. It’s richer and fattier and sweeter, largely due to the inclusion of a bit of mayonnaise in the mix. I plan to play around with the recipe and try to get a copycat for something like the Helluva Good or Deans dips, but this one isn’t that.

I also have to mention the elephant in the room: caramelizing onions. You’ll find a million recipes online asking for caramelized onions, and a ton of them tell you to do it in like 20 minutes or something.

The truth about caramelizing onions is that you’re looking at at LEAST 45 minutes, or possibly even longer. The thinner and smaller you slice your onions, the faster you can caramelize them, but the easier it is to burn them. Just don’t be too surprised if the caramelization step takes an hour or longer, depending on how you do it. On the plus side, the better you caramelize your onions, the more flavorful the dip will be.

Total Time 12 hours 50 minutes

Equipment

  • Frying Pan
  • Mixing Bowl
  • Rubber Spatula

Ingredients

  • 3 Tbsp Butter
  • Cups Chopped Onions Any kind will do; about 3 medium onions.
  • ¾ Tsp Salt
  • ½ Tsp Onion Powder
  • ¼ Tsp Pepper
  • ¼ Tsp Cayenne
  • 4 Oz Cream Cheese Softened
  • ½ Cup Sour Cream
  • ¼ Cup Mayonnaise

  • Melt the butter in a frying pan over medium heat. Add the onions, salt, pepper, onion powder, and cayenne. Cook, stirring often, for 5 minutes. Then, reduce the heat to medium-low and let the onions cook until they caramelize, stirring occasionally. You'll need at least 30-45 minutes for this, if not longer.
  • Mix the cream cheese, sour cream, and mayo in a bowl until smooth and combined.
  • Let the onions cool, and then add them to the cream mixture. Stir this until combined.
  • Chill overnight in the fridge to let the flavors combine, then enjoy with your favorite chips or crackers.
