I grew up with a constant supply of those little Quaker Oats flavored oatmeal packets. I still buy them now and then, but over the last few years of running this blog, I’ve been trying to make my own more. After all, a big pack of instant oats is a lot cheaper than a few packets of single-serving oatmeal!
It has taken a lot of work to get this recipe to where I like it. I kept trying all sorts of different things, adding ingredients, blending up the oats to make more of an oat flour, but it was always missing something. It would be too bland, or too sweet, or two one-note.
Eventually, I found just the right balance of ingredients to give me exactly what I want. It’s still soft oatmeal, with tasty ingredients including chocolate chips, pecans, and cinnamon peeking through. It’s quick to throw together and I can bake it while I do other things, so it’s perfect for a rich and sweet breakfast or — more often — as a dessert in the evening.
One note with this recipe is that I use and love pecans in it, but you’re not limited to pecans. Sometimes I leave them out and add in something like sliced strawberries, or pitted and diced cherries, or blueberries, or other nuts. The mix-ins are entirely preference, so make it however you like it!

Chocolate Oatmeal Treat
Equipment
- 10 oz. Ramekin
- Mixing Bowl
Ingredients
- ½ Cup Plain Oatmeal Quick-cook works best in my opinion but any oatmeal works; choose according to your texture preference.
- 1 Tbsp Cocoa Powder
- 3 Tbsp Brown Sugar Add a little less if you want something less sweet.
- ½ Tsp Baking Powder
- ¼ Tsp Cinnamon
- 2 Tbsp Chopped Pecans Or another mix-in of your preference.
- 3 Tbsp Chocolate Chips Again, add a bit less if you prefer.
- ½ Cup Milk I use almond milk.
Instructions
- Preheat your oven to 375℉ and lightly grease your 10 oz. ramekin.
- In a mixing bowl, mix together the oats, cocoa powder, brown sugar, baking powder, and cinnamon. Add in the pecans and chocolate chips, and stir everything to coat it all.
- Add in the milk and stir to mix it together.
- Pour this mixture into your ramekin and bake for 25 minutes. When done, let it cool for at least 5-10 minutes so you don't burn yourself. Enjoy!
