
Now and then you see a recipe on social media and it just makes you morbidly curious about how it’ll work. I don’t usually make them, either because they’re kind of off-putting to me, or they focus on something I wouldn’t normally make, or they use ingredients I don’t like using.

This one, though, used cottage cheese (something my partner keeps around from time to time) and made brownies (something we both love). So I figured, why not try it and see?

We chose full-fat cottage cheese under the assumption that the fat was the critical component here. None of the recipes I saw specified, so I just made that decision. We also used large curd cottage cheese, but since you mix it all up in a food processor, it doesn’t really matter.

So, what’s the verdict?
They’re alright. The recipe makes cake-like brownies and we’re much more of a fudge-like brownie household, so it was a little off-base right off the bat. You can definitely tell there’s cottage cheese in it, if you know it’s there, but if you didn’t know what was in it you probably wouldn’t guess.

Overall, if you want something like a dense chocolate cake, or a cake-like brownie, these are fine. If you go for brownies because they’re ultra-dense and fudge-like, or you really like the chewy ends and corners, this is definitely going to be off the mark. Which is kind of disappointing, given that they look like they would be a lot more fudge-like than they are.

All in all, it’s not the worst brownie recipe I’ve tried (that dubious honor goes to the two-ingredient brownies) but it’s not one I’ll be trying again.

Brownies with Cottage Cheese

Ingredients
- ¾ Cup Whole Wheat Flour
- ½ Cup Cocoa Powder
- ½ Tsp Baking Soda
- ½ Cup Chocolate Chips Melted
- ½ Cup Sugar
- 1 Cup Cottage Cheese
- 1 Tsp Vanilla Extract
- 1 Egg Room Temperature
- ¼ Cup Butter Melted
- ¾ Cup Milk
- ⅓ Cup Mini Chocolate Chips
Instructions
- Preheat your oven to 350℉. Line your baking dish with parchment paper so you can remove your brownies easily later.
- In a mixing bowl, combine the flour and baking soda. Make a well in the center of it and set it aside.
- In a food processor, blend up the cottage cheese, melted chocolate, melted butter, vanilla, egg, milk, cocoa powder, and sugar. You want this to turn into a smooth batter so blend it until it's fully combined.
- Scrape this wet mixture out of the food processor and into the dry bowl and mix it until it just combines. Fold in the bonus chocolate chips and transfer the batter to the baking dish.
- Bake for 25 minutes, using the toothpick test to make sure it's done. Let it cool and then cut and eat.
