
Traditional puppy chow, like I made a few weeks ago, is a surprisingly heavy little treat. Sure, you don’t need to eat much of it — a few handfuls will do — but dark chocolate, powdered sugar, and a cereal base all add up. Sometimes I want something a little more refreshing and lighter. So I figured, why not see if there was an alternate version I could make?

In this house, when I think something light and refreshing, especially in the spring and summer, I tend to think of lemon. Sweet but tangy, a little sour, lemon is great for so many different treats. In this case, it pairs very well with white chocolate to make a tangy, bright coating for the cereal you use.

Just like the previous puppy chow I made, this one can be done in different ways. The basic recipe is simple, but you can add a few other things to brighten it up. Sprinkles add an eye-catching bit of color! And if you want more tang and a bit of added raspberry flavor, try tossing in a couple tablespoons of pink lemonade mix. It works really well!

We don’t normally keep white chocolate around. I don’t mind it, but I don’t use it often, and my partner is a “the darker the better” kind of guy with chocolate, so rarely eats white chocolate. For this, though, it worked really well to make a lemon coating work without being too sweet, so maybe I’ll have to keep some around for the future.

Lemon Puppy Chow
Equipment
- Large Mixing Bowl
- Double Boiler Or microwave-safe bowl.
- Rubber Spatula
Ingredients
- 8 Cups Rice or Corn Cereal Chex and Crispex both work great.
- 1½ Cups White Chocolate Chips
- 2 Tbsp Vegetable Oil
- 2 Lemons Zest and Juice
- 1 Tsp Lemon Extract
- 2 Cups Powdered Sugar
Instructions
- Pour your cereal into your large mixing bowl and set aside. Try to keep it mostly intact and filter out the broken bits, if it matters to you.
- In your double boiler or microwave-safe bowl, add the white chocolate chips, oil, lemon juice, lemon zest, and lemon extract.
- Melt the chocolate, stirring constantly (if over a double boiler) or stirring every 20-30 seconds (if microwaving) until the chocolate is melted and the lemon is mixed in and smooth
- Pour this mixture over the top of the cereal. Carefully fold it in, trying to minimize breaking the cereal further. Continue until the cereal is well-coated.
- Divide the powdered sugar into thirds and mix one third into the cereal to coat. Repeat with each remaining third for a thorough coating.
- Let sit for a few minutes to soak in and solidify, then enjoy!
A very fun take on a Michigan staple. Lemon puppy chow is a tasty treat to serve to friends. With the spring season settling in, it was a fun new snack to share with my guests and all of them shared an amazing and interest response. Highly recommended!
