Cookie dough is a problem.

On one hand, you can turn it into delicious cookies. But on the other hand, you can just eat it as it is. And it can be hard to leave it alone long enough to turn it into cookies once you get in the habit of enjoying cookie dough itself.

The good news is, once you’re committed to enjoying cookie dough, it opens up a whole new world of tasty treats.

Before you get too concerned, this is specifically an “edible” cookie dough recipe. Edible cookie doughs are doughs without eggs, and use heat-treated flour to avoid pathogens. I don’t know anyone who has caught salmonella or anything, but better safe than sorry, right?

Heat treated flour is just flour that has been baked to kill off any random pathogens or bugs or whatever that might be in it. You can buy heat treated flour, but it’s hard to find in less than industrial quantities, so I just make it.

To heat treat flour, spread a bunch of flour out on a baking sheet and bake it at 350 degrees for 5-10 minutes, or until the flour itself has reached at least 160 degrees. Sift it to break up clumps, and store it in an airtight container for use in any raw recipes, and you’re good to go.

I have a basic chocolate chip cookie dough recipe in this post, but you can substitute it out for another edible cookie dough if you prefer. The star of the show is the cheesecake layer on top, anyway.

Edible Cookie Dough Cheesecake Bowls

Equipment

  • Small Bowl Alternatively, a 4-8 oz. Ramekin also works.
  • Mixing Bowls

Ingredients

  • 1 Tbsp Salted Butter Softened
  • 1 Tbsp Brown Sugar
  • 1 Tsp White Sugar
  • ½ Tsp Milk
  • ¾ Tsp Vanilla Extract Divided into ½ tsp and ¼ tsp.
  • 20 Grams Heat Treated Flour About 2-3 tbsp.
  • 2 Tbsp Chocolate Chips Divided.
  • 6 Tbsp Cream Cheese Softened
  • 1 Tbsp Powdered Sugar

Instructions

  • Cream together the butter and sugars until smooth.
  • Mix in the milk and ¼ tsp vanilla extract and mix it until it's a paste.
  • Add in the flour and mix until it forms a dough. Mix in half of the chocolate chips.
  • Take about a third of the cookie dough and roll it into small balls to use as topping for the dessert later.
  • Press the remaining cookie dough into the bottom of your serving bowl, flattening it down.
  • In another bowl, mix together the cream cheese, powdered sugar, and remaining vanilla and mix until smooth. Mix in the remaining chocolate chips, reserving some for topping if you want.
  • Spoon the cream cheese mixture over the top of the cookie dough and smooth it out. Top this with the cookie dough balls and remaining chocolate chips.
  • Chill for at least 30 minutes, then enjoy with a spoon.
