Dessert Quesadilla Ideas

I’ve been on a tear recently making tortillas more or less from scratch. I’ve already written down my recipe and method here (no tortilla press necessary, though it might help) and having those on hand is half the battle.

What do you do when you’re tired of tacos (impossible) or just have extra tortillas lying around going to waste? My partner answered that question by surprising me with a s’mores quesadilla out of nowhere one night, and that led me down a rabbit hole of trying a bunch of different fillings.

As it turns out, it’s pretty easy to make some kind of tasty dessert out of tortillas and whatever fillings you like. So far I’ve done:

  • S’mores using peanut butter, mini chocolate chips, and marshmallows.
  • Chocolate-covered strawberry using chocolate peanut butter and fresh strawberries.
  • Choco-banana using fresh bananas and Nutella.
  • Strawberry cheesecake using fresh strawberries and a cheesecake filling.

My faux cheesecake filling, which worked out wonderfully for this, was just:

  • 2 oz. Cream Cheese
  • 2 tsp. White Sugar
  • 1 tsp. Vanilla Extract
  • 1/8th tsp. Cinnamon

Mix is all up in a bowl and you’ve got a great little cheesecake spread.

What about making the quesadillas? Normally when I make a quesadilla with meat and cheese, I toss it in the oven, but for these, I just cooked them in my partner’s favorite cast iron skillet. Melt a bit of butter over medium heat, add the assembled quesadilla, fry on one side until lightly golden, flip, repeat, remove, cut, eat. Easy!
