I’m not a big breakfast person, traditionally. I tend to sleep in past the normal breakfast time, and when I’m ready for food, it’s usually more of a lunchtime meal. I treat cereal more as a dessert.

What I am, though, is a fan of breakfast-as-dinner. It’s not uncommon to make pancakes or French toast for dinner around here, especially when some fresh fruit is in season and I can make a delicious fruit compote to top them.

One thing I don’t often make is waffles. Don’t get me wrong; I love waffles! It’s just such a pain to make them. Pancakes and French toast can be made in a pan or on a griddle, but waffles require dragging out the waffle iron, and you can only make them one at a time.
A few weeks ago I was reminded of this fact and the desire to eat some waffles hit me hard. Since it’s autumn and it’s apple season, I figured, why not make some apple-cinnamon waffles? So… I did.

The key to getting this recipe right is handling the apples properly. Peel the apples, and then grate them using a cheese grater into fairly fine shreds. Then, use paper towel to remove a bunch of the apple juices from the shredded apples. If you leave too much liquid in, the waffle batter will be too liquidy and it won’t cook right.

As for a waffle maker, I use a Belgian waffle maker that flips to make sure it cooks evenly on both sides. The flip allows the batter to drop fully into the grooves on both sides, so you don’t end up with half-formed wells. This Cuisinart (that’s the affiliate link) is pretty similar to what I have, though mine is going on 20 years old so it’s not the same model.
I was worried that the shredded apple would get in the way of the waffle texture, but it really didn’t. The waffles turned out great, and I bet they will for you too. Let me know how they go if you make them!

Apple Cinnamon Waffles
Equipment
- Belgian Waffle Maker See post for a link to a good one.
- Mixing Bowl
- Box Grater
Ingredients
- 2 Cups Flour
- 2 Tsp Baking Powder
- 1 Tsp Cinnamon Add more if you want stronger cinnamon flavor.
- 5 Tbsp Butter Melted
- 1½ Cups Milk
- 1 Egg
- 2 Tbsp Brown Sugar
- 1 Cup Shredded Apple
Instructions
- Read your waffle maker's instructions and pre-heat it accordingly.
- In a bowl, whisk together the melted butter, milk, and egg until fully combined. Then, add the brown sugar and stir to mix and dissolve it.5 Tbsp Butter, 1½ Cups Milk, 1 Egg, 2 Tbsp Brown Sugar
- In another bowl, combine the flour, baking powder, and cinnamon, stir together and set aside.2 Cups Flour, 2 Tsp Baking Powder, 1 Tsp Cinnamon
- Grate your apple and use paper towel to get much of the moisture out of it. You don't need to go overboard, but you want it mostly dry to handle.1 Cup Shredded Apple
- Make a well in the dry mix and pour the wet mix into it, stirring it all into a batter until it just comes together. Don't worry about a few lumps. Then, fold in the shredded apple.
- Grease or spray your waffle iron as instructed, add however much batter your machine calls for, and cook according to the instructions. Usually, that means about 3-5 minutes per waffle, and this recipe makes about four large waffles.
