These frozen strawberry bites are perfect for when the weather turns warmer. Frozen berries, coated with a tangy mixture of lemon and yogurt, with some added spices to bring complexity to the flavor; what’s not to love?

The basis of this recipe is just strawberries, coated in yogurt and frozen. What really makes it special is the stuff you put in the yogurt, and coat the outside.
- Lemon brightens the whole thing up and adds a nice tang, particularly if your berries are sweet.
- Spices like cardamom and a bit of black pepper bring complex flavors and a bit of a punch to that helps it avoid being too cloying.
- Powderized freeze-dried strawberries mix up the texture and help your bites look prettier in a bowl.

You can change up pretty much all of this, too. Don’t like cardamom or pepper? Add in some dried or fresh-chopped basil for a strawberry-basil treat instead! Don’t want to use freeze-dried strawberries? Other freeze-dried berries can mix up the fruit flavors more, like raspberry or blueberry, or even a mix!

Frozen Strawberry-Lemon Yogurt Bites
Equipment
- Cookie Sheet
- Parchment Paper
- Mixing Bowl
Ingredients
- 3 Cups Strawberries Hulled and cut into bite-sized pieces.
- 1 Oz. Freeze-Dried Strawberries Or other freeze-dried fruit of choice. Optional.
- ¾ Cup Plain or Vanilla Yogurt Whole-milk yogurt works best.
- 2 Tbsp Vanilla Extract
- 1 Tsp Lemon Zest
- ¼ Tsp Ground Black Pepper
- ⅛ Tsp Ground Cardamon
- ⅛ Tsp Salt
Instructions
- Line your baking sheet with parchment paper and set it aside.
- Crush or food process the freeze-dried strawberries into a powder.1 Oz. Freeze-Dried Strawberries
- In a bowl, mix together the yogurt, vanilla, lemon zest, salt, pepper, and cardamom. Stir until it's well combined.¾ Cup Plain or Vanilla Yogurt, 2 Tbsp Vanilla Extract, 1 Tsp Lemon Zest, ¼ Tsp Ground Black Pepper, ⅛ Tsp Ground Cardamon, ⅛ Tsp Salt
- Add your chopped fresh berries and stir to coat them well.3 Cups Strawberries
- Transfer coated berries to your parchment paper. Transfer individually with a fork to avoid letting them freeze together, or don't worry about it if you're fine breaking it up later.
- Coat the berries with your powdered strawberry for the final topping and look.
- Freeze this all for at least 2 hours, or overnight. When ready to enjoy, remove from the freezer and let sit for 5-10 minutes so they're softer and more pleasant to eat.
