Frozen Strawberry-Lemon Yogurt Bites

Frozen strawberries coated in a delightful mix of yogurt and spices for a no-added-sugar summer treat.

Ingredients

  • 3 Cups Strawberries Hulled and cut into bite-sized pieces.
  • 1 Oz. Freeze-Dried Strawberries Or other freeze-dried fruit of choice. Optional.
  • ¾ Cup Plain or Vanilla Yogurt Whole-milk yogurt works best.
  • 2 Tbsp Vanilla Extract
  • 1 Tsp Lemon Zest
  • ¼ Tsp Ground Black Pepper
  • Tsp Ground Cardamon
  • Tsp Salt

Instructions

  • Line your baking sheet with parchment paper and set it aside.
  • Crush or food process the freeze-dried strawberries into a powder.
    1 Oz. Freeze-Dried Strawberries
  • In a bowl, mix together the yogurt, vanilla, lemon zest, salt, pepper, and cardamom. Stir until it's well combined.
    ¾ Cup Plain or Vanilla Yogurt, 2 Tbsp Vanilla Extract, 1 Tsp Lemon Zest, ¼ Tsp Ground Black Pepper, ⅛ Tsp Ground Cardamon, ⅛ Tsp Salt
  • Add your chopped fresh berries and stir to coat them well.
    3 Cups Strawberries
  • Transfer coated berries to your parchment paper. Transfer individually with a fork to avoid letting them freeze together, or don't worry about it if you're fine breaking it up later.
  • Coat the berries with your powdered strawberry for the final topping and look.
  • Freeze this all for at least 2 hours, or overnight. When ready to enjoy, remove from the freezer and let sit for 5-10 minutes so they're softer and more pleasant to eat.
