Giant Oatmeal Raisin Cookie

Since my household is just myself and my partner, it’s really easy for a whole batch of cookies to never get finished. When I can, I like to give the extras to friends and neighbors, but I’m not always able to do that. So, one thing I like to do is make an evening’s dessert out of one giant cookie we can split, or two large single-serve cookies we can each enjoy.

I’ve made a couple of these recipes in the past:

Today’s adds onto this list with one of my partner’s favorite cookies: oatmeal raisin.

This one is a little smaller than the other recipes, and makes a cookie about six inches across. It’s perfect to split, or enjoy on your own without feeling too overstuffed when you’re done. It’s a soft and chewy cookie, with crisp and caramelized edges from baking it.

It’s also a really easy recipe to make. You basically just mix everything together, put it on a baking sheet, and bake it. It’s super simple to throw together for an after-dinner treat, or double/triple the recipe to make some for the family.

Giant Oatmeal Raising Cookie

One large single-serving oatmeal raisin cookie, for the raisin lovers out there.

Equipment

  • Baking Sheet
  • Silicone Baking Mat

Ingredients

  • 2 Tbsp Butter
  • 3 Tbsp Brown Sugar
  • 2 Tbsp Egg Beaten
  • ¼ Cup Flour
  • ¼ Cup Quick-Cook Oats
  • Tsp Baking Powder
  • Tsp Cinnamon
  • ¼ Tsp Vanilla Extract
  • 2 Tbsp Raisins
  • 2 Tbsp Crushed Pecans Or other nuts, more raisins, chocolate chips, or other mix-ins of your choice.

Instructions

  • Preheat your oven to 350℉ and line your baking sheet with your baking mat (or parchment paper if you prefer).
  • Melt the butter in a medium bowl. Add in the brown sugar, egg, flour, oats, baking powder, cinnamon, and vanilla extract, mixing well into a dough.
    2 Tbsp Butter, 3 Tbsp Brown Sugar, 2 Tbsp Egg, ¼ Cup Flour, ¼ Cup Quick-Cook Oats, ⅛ Tsp Baking Powder, ⅛ Tsp Cinnamon, ¼ Tsp Vanilla Extract
  • Add your mix-ins (raisins, nuts, and anything else you want to add), and mix it all together.
    2 Tbsp Raisins, 2 Tbsp Crushed Pecans
  • Form the dough into a disc about 3-4 inches across and place it on your baking sheet. Bake for 13-15 minutes. You're looking for the edges to be browned and the center just set.
  • Remove from the oven and let cool for a couple of minutes, then enjoy!
