Giant Oatmeal Raising Cookie

One large single-serving oatmeal raisin cookie, for the raisin lovers out there.

Ingredients

  • 2 Tbsp Butter
  • 3 Tbsp Brown Sugar
  • 2 Tbsp Egg Beaten
  • ¼ Cup Flour
  • ¼ Cup Quick-Cook Oats
  • Tsp Baking Powder
  • Tsp Cinnamon
  • ¼ Tsp Vanilla Extract
  • 2 Tbsp Raisins
  • 2 Tbsp Crushed Pecans Or other nuts, more raisins, chocolate chips, or other mix-ins of your choice.

Instructions

  • Preheat your oven to 350℉ and line your baking sheet with your baking mat (or parchment paper if you prefer).
  • Melt the butter in a medium bowl. Add in the brown sugar, egg, flour, oats, baking powder, cinnamon, and vanilla extract, mixing well into a dough.
    2 Tbsp Butter, 3 Tbsp Brown Sugar, 2 Tbsp Egg, ¼ Cup Flour, ¼ Cup Quick-Cook Oats, ⅛ Tsp Baking Powder, ⅛ Tsp Cinnamon, ¼ Tsp Vanilla Extract
  • Add your mix-ins (raisins, nuts, and anything else you want to add), and mix it all together.
    2 Tbsp Raisins, 2 Tbsp Crushed Pecans
  • Form the dough into a disc about 3-4 inches across and place it on your baking sheet. Bake for 13-15 minutes. You're looking for the edges to be browned and the center just set.
  • Remove from the oven and let cool for a couple of minutes, then enjoy!
