
Are you ever in the mood for a tasty dessert, something like a rich and fudgy brownie, but you want to go a little off the beaten path?

I like to change things up with my desserts from time to time, which means I’m often looking for desserts like something I enjoy, but not quite the same thing. Desserts that resemble them, but come from foreign countries, usually fit the bill. It’s also a cool way to broaden your culinary horizons without stepping too far outside your comfort zone.

Today’s recipe is a Kladdkaka, which if you’re familiar with the general shape of languages, you can probably identify as Nordic. In fact, it’s a Swedish recipe; the name comes from the Swedish word Kladdig, which just means “sticky”.

So, what is it? It’s basically a brownie, except it’s denser, fudgier, and a little bit molten if you eat it right away. It’s sort of like a cross between a brownie and a lava cake. In fact, there’s even a theory that the recipe started life as brownies that left out the baking powder due to shortages. Though, some say it’s just a French recipe that was adapted for Sweden. Who can say?

What I can definitely say is, it’s delicious. Who can turn their nose up at a variation on the brownie? I certainly can’t. So, here, make one for yourself and let me know what you think!

Decadent Chocolate Kladdkaka
Equipment
- 9" Springform Cake Pan
- Parchment Paper
- Sauce Pan
- Rubber Spatula
Ingredients
- 10 Tbsp Butter
- 1⅓ Cup Sugar
- 2 Eggs
- 5 Tbsp Cocoa Powder
- ¾ Cup Flour
- 1 Tsp Vanilla Extract
Instructions
- Preheat your oven to 350℉. Cut a circle of parchment paper to line the bottom of your springform pan. Grease the pan and put the parchment paper on top of it.
- In a sauce pan, melt the butter over low heat, then remove from the heat once fully melted.10 Tbsp Butter
- Add the sugar to the butter in the sauce pan and stir to combine. Add the eggs one at a time and stir to mix after each.1⅓ Cup Sugar, 2 Eggs
- Add the cocoa powder, flour, and vanilla to the mixture and stir until it comes together into a batter.5 Tbsp Cocoa Powder, ¾ Cup Flour, 1 Tsp Vanilla Extract
- Pour the batter into your cake pan and bake for 25 minutes. You're looking for a sticky, underdone-looking center rather than full brownie cooking.
- Let the Kladdkaka cool fully before cutting and serving. Optionally, top with fruit, whipped cream, or a sprinkle of powdered sugar.
