
Another day, another simple cookie recipe you can make in minutes and enjoy for days. A sweet, sugary cookie dough forms the base of these cereal-mimicking cookies, and an infusion of cereal marshmallows gives them that bit of color that make an exceptional treat for children. If you or your kids love Lucky Charms, then these Lucky Charms Cookies are great.

I love these cookies, but I don’t make them very often because cereal marshmallows aren’t something I usually keep in stock. You can buy them online, but I’m not sure I’ve ever seen them in a store, at least around here. So, you have two options.

- Buy a bag of dehydrated cereal marshmallows. This bag (Amazon affiliate link here) will last a long time if you aren’t snacking on them. The shapes don’t matter since they melt into the cookies, but the colors do.
- Buy cereal and pick out the marshmallows. You can use the leftover cereal to make cereal bars, or just eat it, obviously.

For this recipe, for a batch of 28 cookies, you’ll use about a cup of cereal marshmallows. You shouldn’t need more than one box of cereal if you’re “harvesting” them, but it’s definitely tedious.

Lucky Charms Cookies

- Mixing Bowl
- Stand Mixer Optional, but helpful to speed it up.
- Silicone Baking Mat
- Cookie Scoop
- Cooling Rack
Ingredients
- ¾ Cup Butter Softened
- ½ Cup White Sugar
- ½ Cup Brown Sugar
- 1 Egg
- 1 Tbsp Vanilla Extract
- ½ Tsp Salt
- 1 Tsp Baking Soda
- 2 Cups Flour
- 1 Cup Cereal Marshmallows
Instructions
- Preheat your oven to 350℉ and line your baking sheets.
- In a bowl (stand mixer makes it easy), beat the butter and both sugars together until fluffy.¾ Cup Butter, ½ Cup White Sugar, ½ Cup Brown Sugar
- Add in the egg and vanilla and beat to mix well.1 Egg, 1 Tbsp Vanilla Extract
- In another bowl, mix together the flour, salt, and baking soda. Add this to the sugar mixture and mix until it comes together into a dough.½ Tsp Salt, 1 Tsp Baking Soda, 2 Cups Flour
- Mix in the cereal marshmallows until evenly distributed.1 Cup Cereal Marshmallows
- Scoop about 1½ tablespoons of dough at a time into balls and arrange them on your baking sheet, 1-2 inches apart from one another to account for spreading as they bake.
- Bake each batch of cookies for 9-10 minutes. You want the edges of the cookies to be set but not browning much. When done, remove and let them cool on the baking sheet for about five minutes, and then another ten on a cooling rack. Enjoy!
