Breakfast Yogurt Popsicles

Frozen yogurt and fruit make this a breakfast parfait on a stick!

Equipment

  • Silicone Popsicle Molds

Ingredients

  • Cup Yogurt Any flavor, but a complementary fruit works best IMO.
  • Cup Fresh Berries I used strawberries and blueberries.
  • 4 Tsp Honey
  • 1 Tsp Vanilla Extract Optional but adds depth of flavor. Leave out if you're using vanilla yogurt.
  • 6 Tbsp Granola For the "top" of the popsicles, but can be mixed in. Also optional.

Instructions

  • Stir the granola and half the honey in a bowl and set it aside.
  • Mix the yogurt, berries, half the honey, berries, and vanilla in a bowl.
  • Spoon the yogurt mix into the popsicle molds, filling most of the way up, but leaving a bit of room for the granola. Top with granola, add the sticks (and lid if necessary), and freeze overnight.
