Peanut Butter Breakfast Bars

  • Parchment Paper
  • Mixing Bowl
  • Rubber Spatula

Ingredients

  • 2 Eggs
  • 1 Cup Peanut Butter
  • Cup Maple Syrup
  • 1 Tsp Vanilla Extract
  • Cups Oats Any kind works, pick your texture preference.
  • ¼ Tsp Baking Soda
  • 1 Tsp Pumpkin Pie Spice See post for link to recipe.
  • 1 Cup Chocolate Chips
  • ½ Cup Chopped Nuts

Instructions

  • Preheat your oven to 350℉. Line your baking dish with parchment paper.
  • In a bowl, combine the oats, pie spice, and baking soda and set aside.
  • In your mixing bowl, beat together the eggs, peanut butter, syrup, and vanilla until smooth.
  • Add in the dry mixture and mix well.
  • Stir in the chocolate chips and nuts, and mix until distributed.
  • Pour the mixture into your baking dish and smooth it out.
  • Bake for 25 minutes. You're looking for the edges starting to brown.
  • Remove from oven, let cool, and enjoy. Cut and wrap in plastic or parchment paper for a portable treat.
